CSA Report - Week 8

Oh, the joy of fresh vegetables straight from the farm! I can't tell you enough how much I love knowing exactly where and how my vegetables are grown.

This week I brought home:

  • 2 lbs potatoes
  • 1/2 lb chard
  • 1/2 lb mustard greens (what to do with these?)
  • 1 head of lettuce
  • 1 bunch scallions
It's really starting to get good. Blackberries are around the corner. Tomatoes are starting to ripen. Cucumbers and zucchini are on the way. I'm already preparing to freeze and maybe even can some of the extras because if the rest of the summer is anything like last year I'm going to have a hard time using up my share.

I can almost hear your excitement right though this post! And I share it entirely - this is the best time of year in so many ways.

Mustard greens - I treat them like any other green (chard, kale, spinach, etc) and just cook them right up. The easiest way I think is to do a quick sautee, a little olive oil with the greens, maybe a bit of scallion and garlic, and salt/pepper if you like. I'll cook them until they get that bright green color and are a bit wilted, but have some bite still. You can also mix them with other greens you may have on hand, the contrasting flavors are fun.

I just got an upright freezer for this very reason. Green beans, yellow squash, and lots of sweet corn have recently been frozen for use this fall and winter. BTW, I made that potato and green bean salad for supper tonight. YUM!!!! Thanks for the recipe. I had to substitute white wine vinegar, but that dressing is to die for. It may be my new regular salad dressing, too. Thanks for the great recipe. Looking forward to trying the pasta one!

livinginalocalzone - That's what I figured I'd try. A simple saute or else add to a sauce for pasta. Yummy!

Lady Capulet - I wish this was all self-grown. It's not though...I joined a Community Supported Agriculture farm, where I get a share of the harvest each week. It's like home grown, without all the work on my part. :)

Betsy - I've been thinking about getting a small chest or upright freezer, too. I packed my freezer full last year and could have easily stored more food but didn't have room for it. How big is yours and where did you get it? I'm having trouble finding one that's the right size for my little house.

I think mine is almost 15 cubic feet. It is a little smaller than a refrigerator. I have it in my basement, but I know lots of people who have their extra freezer in their garages. I bought mine from a little locally owned appliance store. In addition to eating local, I think it is uber important to support our locally owned and operated businesses. Bonus- locally owned usually includes delivery in their prices. Well worth it to me!!

Thanks, Betsy. That's a great point about supporting local businesses. I'll have to look around some more. I don't have a garage, so mine would also end up in the basement, too.
